(Experimental SMASH with brettanomyces Claussenii yeast)
SMASH stands for Single Malt And Single Hop. Using only one variety of hop and one variety of malt brings out the distinctive flavour of each. A 100% brett fermentation of the Claussenii variety results in a rather unique beer. While using a 100% “Château” pale malt base renders good malt flavours, the yeasts and Simcoe hops create fruit tastes (citrus, passion fruit, pineapple, etc.) that are enhanced by slightly earthy, woody (conifers) and bitter flavours that produce a truly unique beer.
